From the Indian state of Kerala, located on the Malabar Coast (Arabian Sea) of south-west India, comes the India Monsooned Malabar. Monsooned is a process applied to coffee beans. The harvested coffee seeds are exposed to the monsoon rain and winds for a period of about three to four months, causing the beans to swell and lose the original acidity, resulting in a flavor profile with a practically neutral pH balance. The beans change in size, texture, and appearance, both as beans and in the cup. However, that is what makes the Monsoon Malabar unique, with a very singular flavor and unmatched aroma
